today felt like BBq time

When the sun is out and the air is fresh, I begin to get that feeling that the Q needs to get fired up and a piece of meat needs to meet its destiny. If things go to plan this weekend will see the pig in the middle team working on their stratagy to bring home some ribbons and prize money, this up coming year. Things are begining to take shape on the catering side (Blue collar BBQ catering) and we have been contacted for 4 events already. It's only rock and roll but I like it

The band Carnival Knights just released their debut album," Jacknife Queen" and for their c.d. release party wanted to have B.B.Q available, we came by and worked the day to bring the band and their fans beautiful pulled pork sandwiches and ribs. It is a tradition with me to take my father out for BBQ on his birthday. This year we went to a restaurant in Langley called Ozark's the interior was nice, but the question was if the brisket was good. Dad ordered beef ribs and I the brisket sandwich. When the food came the first thing I noticed about the sandwich was that they had shredded the brisket this was a disappointment for me part of the joy of brisket is the way that it melts in your mouth if it is cooked right. The flavour lacked for me as well somehow missing it's smokey aroma. again disappointed.
Now The beef ribs were a totally different story they were big and meaty an order of three on the plate plus the fixings. The flavour thick with smoke and the meat was perfectly tender, everything was sauced nicely as well. I sat at the table wishing that I had ordered the same thing.
I think that at the end of the day Ozark's is a worthwhile place to take in the taste of southern style BBQ, but maybe keep it to stuff that is bone in.

This past Saturday chris and I did our second wedding. The main meal item was the brisket, we also did some ribs, chicken skewers, greek salad, potatoe salad, baked beans and some corn bread. it was a long day of BBQing but it was worth it. the wedding party loved the food and everything was eaten up.

schools in


As summer comes to a close, and fall begins to knock at the door. School is just about to begin, the kids will have to face books reading writing and arithmetic. Pig in the middle is going to be doing some pulled pork for Freshwind Church here in Abbotsford, because really can you think of a better time to do BBQ? We'll be doing about 40lbs of pork butts. Which is not actually the butt, but the top part of the shoulder, we rub it, we smoke it, we serve it. So if your at your church picnic and someone offers you a pulled pork sandwich, and says its pork butt, don't worry it's all good. Sink your teeth into that sandwich with the confidence of road weary Q freak like me. happy reading

chris and I(geoff) are getting ready to serve some of the pulled prok, ribs and chicken that we did for our first catering gig. The food turned out fantastic and group we catered to raved about our food. Anyone looking for some good BBQ at a good price give Chris and I a call.
